The Preferred has the best of both worlds. Located in a picturesque corner of Palermo, those who enter through Guatemala will find the bar, where most eat standing up or on stools while enjoying a drink and a bite. Whoever does it through the entrance of Borges, on the other hand, will come across a harmonious restaurant set like a typical still life with squared tablecloths, comfortable chairs and an atmosphere like old times, with chandeliers that illuminate the place, tin signs and the logo of the local in the dishes. The walls are covered in half with wood and decorated with matching shelves, shields that belong to regions of Spain and a huge painting that reveals the recipe for fabada, an exclusive artist of the place. The last decorative detail is given by a fish tank.

As a good still life, the place offers hearty dishes. When it comes to classics, the Spanish omelette is an undisputed hit. But the options are various and very interesting: from Madrid-style tripe, schnitzel with marsala to squid, Spanish potatoes, paella and the main dish: Asturian fabada, a stew with beans, bacon, chorizo, blood sausage, potato, onion and sweet potato. For dessert? Infallible classics like custard, rice pudding or pancakes with lots of homemade dulce de leche.

The quality of the dishes is due to the fact that they are made with organic vegetables from their own garden, homemade preserves and sausages made by the master butcher Guido Tassi, which are displayed in a cellar at the back of the dining room.
