PureTierra

Belgrano

From the neighborhood of Belgrano, PuraTierra aims to be a bastion for the construction of South American cuisine, inspired by nature. That is the bet of Martín Molteni, who transforms PuraTierra into a creation space where he expresses his philosophy, at the hand of nature and the rhythm of the seasons.

There we will find a kitchen sensitive to all diners, with vibrant products such as meats (lamb, steer, bondiola, llama); birds (quail, grain chicken); fish (grouper, chernia, sea bream, corvina, palometa and whatever the port dictates); kneaded pasta; passing through exotic fruits and vegetables of all origins, accompanied by endless herbs, flowers, buds, grains and others, which will give a nuance to the kitchen.
Plays measured, in order to enjoy all the steps of the menu, and to take the time of an honest meal, with moments for reflection, and space for friendship, on a comforting table.

The tasting menu shows options such as duck magret, pak choy, mango chutney and orange powder; Braised patagonian lamb, with roasted Andean potatoes, turnip, chauchata and smoked bacon in lemon and thyme broth; or bondiola de cerdo, honey glaze of Noa spices, pear, cultivation fungus and roasted beet.
